Post subject: Tip for pouring with unknown amounts |

Hey all - I was thinking of this while I was adding some new recipes today.
When you get a recipe that has a referential amount (eg. "1 part", "Fill with", etc.) that is based on the size of the glass, and it requires shaking, the best way to do it is to add the ingredients to the glass first, then transfer everything to the shaker, shake, and transfer back to the glass.
That way you don't have to guess at how much to put into the shaker and accidentally put in too much/too little.

If you are talking about just a highball (1 liq + 1 Mix) then I treat it as a poured drink. Simply stack the ice, add a shot of alcohol (1-1.5oz) and fill with mix/juice etc. No need to shake as long as the mix is not Sweet & Sour and as long as you add the mixer last. The heavier mixer added last will cause the drink to self-mix as it forces its' way to the bottom.
If you are talking about recipes with multiple ingredients and no measurements, then I simply mix to taste. I see this alot with drinks served in cocktail (AKA martini) glasses or shots. Those are easiest when just made with equal parts.
Keep in mind that when mixing liquor with liquers a 2:1 ratio is usually best.

| Personally, adding everything to a glass is bad if it includes soda because the soda will go flat and the drink stale. Just use your good bartending sense to know that if a drink has soda in it, it has to be the majority amount, period. Otherwise the soda doesn't have any SODA taste and it goes down like syruppy crap. |
