<title>Garibaldi</title>
<description>1. Fill a highball glass with ice.
2. Add Campari and orange juice.
3. Stir and garnish with an orange slice or wedge.

### Preparation notes
- Blood orange juice is preferred for a Garibaldi.
- The Garibaldi benefits from &quot;fluffy&quot; orange juice, as popularized by Dante, an Italian-style bar in New York.  Simply put orange juice (fresh-squeezed is always better!) into a blender without anything else and blend on high to aerate it.  Pour immediately for maximum effect.</description>

<title>Bees Knees</title>
<description>1. Prepare some honey syrup (equal parts honey and water - see preparation notes).
2. Add ice to a cocktail shaker, then honey syrup, gin and lemon juice.
3. Shake until well chilled, approximately 30 seconds.
4. Strain into a cocktail glass.
5. Twist a lemon peel over the glass to express the citrus oil, then drop it in.

### Preparation notes
- To prepare honey syrup, mix 1 part honey with 1 part water in a microwaveable (or stovetop) safe container, and heat until you can mix the honey thoroughly into the water.  For example, for the 1/2 oz of honey syrup needed to make one Bees Knees, combine 1/4 oz of honey and 1/4 oz of water.  Scale up as needed.</description>

### Preparation notes
- A Boulevardier can be made with either rye whiskey or bourbon.
- The official International Bartender's Association version calls for a Boulevardier to be served in a cocktail glass.  More often than not, in practice an old fashioned glass is used!</description>

<title>Paloma</title>
<description>1. Rim a highball glass with sea salt or kosher salt by first rubbing a lime wedge (or a piece of grapefruit) around the rim, then dipping it in the salt.
2. Add tequila, grapefruit juice, lime juice and simple syrup and stir well.
3. Add ice to the glass and fill with sparkling water.
4. Garnish with a lime wedge or a piece of grapefruit.

### Preparation notes and Paloma variations

There's a lot of variety in Paloma recipes you can find.  Experiment to see what you like best!

- Fresh ingredients are always your best bet.  If you have access to fresh grapefruit juice you will get superior results over bottled or concentrated juice.
- Salting the rim is optional.  If you don't like it that way, leave off the salt!
- Grapefruit soda is a good option that appears in common variations of the Paloma.  It can be used either with, or instead of, grapefruit juice and can replace both the sparkling water and sugar syrup as well.  Try just tequila, lime juice, and grapefruit soda in a pinch (don't forget the salt!)
- Mezcal instead of blanco (white) tequila can make an excellent variation with smokier flavour.
- Salt flakes can make a nice garnish to go with your lime or grapefruit wedges.</description>
