Champagne

Glossary:

Champagne is a sparkling wine produced by doing an in-bottle fermentation of wine that produces carbonation.

Champagne specifically refers to sparkling wines produced and bottled in the Champagne region of France, and most countries abide by this convention, not allowing other wines to be labelled as Champagne. Other carbonated wines are simply referred to as "sparkling wine".
