One piece of ice, Anis dulce and Brandy into a snifter - in this order - the anis carefully or over a spoon. The anis dulce is heavier than the Brandy.

Needs to be anis dulce , definitely not anis seco . The sweet one , not the dry one.

In Andalucia it is known as "el desayuno de los viejos" or sometimes "el desayuno de los abuelos" and is often served in the morning with a coffee on the side... A breaky you don't have to chew. "The breaky of the oldies or grandparents".

My grandad used to make it unmixed. Pouring the brandy into a shot glass first, and then gently over the back of a spoon adding the anisette.

Sol y Sombre is best served at room temperature; simply pour the spirits into the glass, swirl, drink, enjoy!
