Gomme syrup is similar to bar syrups (simple syrups) - it is a sugar and water mixture, but it also contains gum arabic as an emulsifier. This is because gomme syrup is a supersaturated sugar solution - the highest percentage of sugar to water possible - and the gum arabic prevents the sugar from crystallizing and smooths the texture.
